Join us on October 20th for the release of our newest spirit, Valencia. Valencia is a beautiful, natural triple sec for cocktailing that we make with both dried and fresh orange peels to capture the sweet, bitter and fragrant character of citrus.
Categorized within the orange liqueur family, triple sec is a clear, semi-sweet orange-flavored liqueur typically made from the peel of sweet and bitter oranges. Popular brands of orange liqueur include Cointreau, Grand Marnier, Pierre Ferrand, and Marie Brizard.
Getting this spirit ready for you took months of research, development, and cocktails. First, we steeped two kinds of dry orange peel (Spanish sweet oranges and Haitian bitter oranges) in our Tiki Rum for three weeks. After that, we redistilled the infusion, adding freshly zested organic orange peel to the still’s steam baskets to infuse even more orange character into the distilled product. From there, we added simple syrup to reach our desired proof (80 proof, 40% alcohol by volume).
As always, we used entirely natural ingredients to make Valencia, never any flavor extracts or coloring. The base of the spirit is our Tiki Rum, one of the highest rated light craft rums in the country (92 points from Wine Enthusiast).
While Valencia can be enjoyed neat as a digestif or on the rocks, it is most often used as an ingredient in a wide range of cocktails, including the margarita, Cosmopolitan, Sidecar (or its modern riff, the Cable Car), Mai Tai, Kamikaze, Knickerbocker, Beachcomber, etc.
